Hug Video..+ cooking spree

Sunday was hug 2nd birthday.. he was born on the 29th May 2009.. bought hug a nice big rose toy.. gave it to him before i headed off to work.. came back..as usual.. left with fragments of roses.. here n there..all over the floor.. not unusal.. thank god he did not chew on the metal stick.. silly hug.. on his Big day.. Drew & I brought him to Kings park for a walk.. nice n cooling weather..then after.. headed home.. D parents got him some icecream..n cake.. as usual.. finish till the last drop.. licked it clean and shiny.. haa.. decided to make a video for hug.. on his achievement for his performance.. mixed of sit.. roll over.. mouth.. play dead..over the loop.. hop.. crawl.. n not forgetting his fav.. eating..

Besides preparing for exam.. which is next monday... prepared dinner too.. mixed of western and mexican.. haa..i suppose.. 
had Roasted capisum w/ cous cous.. spicy wedge.. Mortadella chilli ham.. brussell sprouts..mixed veg.. sunny side up.. n chilli pappadum..n Kiwano.. a unique watermelon that hv spike on it.. tasted like jelly.. aloe vera.. tomato..??.. unique taste.. topped w/ some honey for sweeter taste.. 






Today.. after revised for sometime.. decided to bake Lamington.. w/ choco and also pandan flavor..
Ingredients:
125g butter - chopped
1/2 cup of sugar
2 eggs
1 tps of vanilla essence
2 cup of self raising flour
1 tps of baking powder
1/2 cup of milk
2 cup of dessicated coconut
Extra: Pandan essence

Icing:
4 cups of icing sugar
1/2 cup of cocoa powder
2/3 cup of milk
20g of butter

1) First, preheat the oven @ 180 deg c, lightly grease the pan (18X28cm) with baking paper.
2) Beat the butter and sugar together till pale and creamy, add in 1 egg at a time and beat well. Beat in vanilla essence.
3) Sift flour, baking powder and cocoa powder together. Lightly fold in creamy mixture and milk alternatively, ending with flour mixture.
4) Split the mixture into 1/2 if you like to add in pandan essence. Spoon mixture into pan, smoothen the top and bake for appro 30 - 40 mins, till cook. Use a toothpick to test. Cool pan in oven for 5 mins before placing on cooling rack to cool.


Icing : Sift icing sugar and cocoa together into a large heat-proof bowl. Stir in milk and melted butter. Place bowl over a saucepan on a gently simmering water. Heat gently till icing sugar dissolves and mixture is smooth and runny ( for coating consistency).

5) Spread dessicated coconut on a shallow tray. Cut the cake into shape as desired and dip each cake into icing mixture, drain off excess and roll in coconut to coat. Place on a tray to leave to set.
