As requested.. n fav or drew.. baked his Mega Fruit custard tart.. haa.. that's the biggest tray i can find to fit the tart..
Baked Mega Fruit custard tart:
Ingredients:
Pastry
- 2 cups plain flour
- 1/4 cup caster sugar
- 125g butter, chilled, chopped
- 1 egg
Custard
1 heaped spoonful of custard powder (or as per instructed on the box)
4 tps of sugar
1 tps of vanilla essence
1 cup of milk
Fruits:
Mango, Kiwi, apples (or as desired)
Extra:
2 tps of gelatine mixed with warm water.
Methods:
1) Mixed the softened chopped butter with sugar till creamy.
2) Add in egg followed by flour.
3) Grease a cake pan/ tray. Line base with baking paper. Roll out pastry and line pan with pastry. Refrigerate for 10 minutes.
5) Preheat the oven @ 200 C.
6) Place a shift of baking paper over the pastry with rice/beans on top so that the pastry will not be blotting up. Place it in the oven and bake for approx 10-15mins.
7) Remove the baking paper w/ rice and further bake for 5mins.
8) Cool the pastry.
9) Mixed custard powder and sugar and milk. Cooked it slowly over the pan till sugar are dissolved.
10) Pour onto the pastry and fridge it for approx 1.5hrs.
11) Sliced up the fruits as desired and lay it on top of the custard tart. Pour gelatine over it.
12) Refridge for approx 1hrs.
Went for a short hike over the weekend @ Mundaring Bell rapid.. This 5.5 kilometre unique Bell's Rapid circuit walk trail passes along the Swan River and is noted as one of the best vantage points for the annual Avon Descent white water event with its rushing waters in winter. Walkers can enjoy scenic views of Bells Rapids, the country side and coastal plains, with beautiful grey kangaroos at certain times of the year. Did not get to see kangaroo..but plenty of poos was found along the trail..
As usual.. while walking .. headed off track again.. took a short cut.. arrived 1/2 way up the hill.. started pouring heavily.. got to run all the way to the top.. our destination.. finally..gt there.. as it was raining.. scenary was kind of being covered by the mist.. dissapointing.. but fulfilling trips.. as we conquer another hill..haa..along the way down...found a skeleton body of a dead kangaroo.. believe must hv being there for ages.. as it left with only the bones.. no flesh at all..

Finally, my prac at PMH ended.. was a 2 weeks prac in Oncology ward.. looking after paediatrics with cancer.. such as Acute Lymphoblastic Leukaemia, Acute Myeloblastics, Wills Tumor, Neuroblastoma, etc.. most kids are diagnosed with Leukaemia.. means cancer of the blood.. parents are alway there.. by their sides providing support and care.. some kids are so young.. youngest i seen in ward was a 17 Days old infant.. poor boy.. diagnosed with cancer at such a young age..but.. they said that.. its alot easier for children to recover fully from cancer in comparison to adult.. relieved to hear that.. basically..learnt lots from the prac.. various medication.. policy and guideline.. hygiene.. sterile condition.. infection control.. vital obs.. drawing of blood sample for testing.. care and support for kids.. n parents.. it was a nice experience..besides meeting some nurses who are "cocky" and "fake" and "bitchy".. some are nice too.. :)... My conclusion.. paediatrics might not be my cup of tea.. c how it goes.. you nv know the future.. only God knows.. haa..
Now.. busy finalising my care plan.. clinical competencies.. and gonna start planning to build a roof for huggy.. big project on it way..
